Italian cooking and tradition: Lenten cookies

Loved by the grown-up and the kids, who often enjoy playing with these curious letter-shaped cookies, Lenten cookies are made during Lent, especially in the Florentine area and in Prato.

Ingredients

  • 3 whipped egg whites
  • 150 grams of flour
  • 30 grams of cocoa
  • 170 grams of icing sugar
  • 1 Orange peel
  • Salt to taste.

 

Preparation

Mix the flour with the cocoa, the sugar and a pinch of salt.

Grate the orange peel in the mixture.

Then add the three whipped egg whites, continuing to mix everything.

If the mixture is too liquid, add more flour; if it is too hard, add another egg white.

At this point you can create the letters (with the pastry bag if you are expert

enough), which have to be placed on a baking tin covered with baking paper.

Cook in the oven at 150 ° C for about 15 minutes.
